Roasted Yellow Pear Tomatoes
- 500 ml (2 pt) yellow pear tomatoes, stems removed
- olive oil
Oil a 20 x 20cm (8 x 8") glass baking dish with olive oil. Add tomatoes. Bake at 93°C (200°F) for 45 minutes to 1 hour, stirring every 15 minutes to keep the tomato skins coated with juices. Tomatoes are done when they are a rich golden colour throughout and liquid has reduced and thickened. Use in soups or serve tossed with pasta.
