Fresh Tomato Sauce with Italian Salami


  • 30 ml (2 Tbsp) extra-virgin olive oil
  • 2 medium garlic cloves, minced
  • 1.36 kg (3 lb) ripe round tomatoes, cored, peeled, seeded, and cut into 1cm (1/2") pieces
  • 130 ml (4 oz) salami, cubed
  • 15 ml (1 Tbsp) fresh oregano leaves, chopped
  • 85 ml (1/3 c) pepperoncini salami, thinly sliced
  • 1.25 ml (1/4 tsp) salt
  • .65 ml (1/8 tsp) pepper, freshly ground
  • Granulated sugar


Heat oil in a skillet over medium heat and sauté garlic until fragrant, 1-2 minutes. Add tomatoes and increase heat to medium-high. Cook about 10 minutes, stirring in salami after 8 minutes to heat through. Add oregano, pepperoncini, salt, pepper and sugar to taste.
