Egg, Bacon and Leek Pie

Serves 4


  • 180g (6 oz) pie crust
  • 120g (4 oz) leeks, washed & very thinly sliced
  • 180g (6 oz) bacon, diced
  • 4 eggs
  • Salt and pepper to taste
  • 1 pinch nutmeg, freshly grated


Preheat oven to 200°C (400°F). Line pie dish with pastry crust. Place a layer of leeks on the crust, then add a layer of bacon. Break the eggs on top. Season to taste with salt and pepper and add pinch of nutmeg. Cover with a thin layer of pastry. Bake for approximately 40 minutes.
