Egg, Bacon and Leek Pie
- 180g (6 oz) pie crust
- 120g (4 oz) leeks, washed & very thinly sliced
- 180g (6 oz) bacon, diced
- 4 eggs
- Salt and pepper to taste
- 1 pinch nutmeg, freshly grated
Preheat oven to 200°C (400°F). Line pie dish with pastry crust. Place a layer of leeks on the crust, then add a layer of bacon. Break the eggs on top. Season to taste with salt and pepper and add pinch of nutmeg. Cover with a thin layer of pastry. Bake for approximately 40 minutes.
