Not too sure what to do with all of your extra cucumbers? This salad is a perfect way to utilize them as well as a cool treat on a hot summer’s day.
- 1 small onion diced
- 3 thinly sliced cucumbers (try a cheese knife)
- 1/2 cup white vinegar
- 1/3 cup white sugar
- 1 TBSP dried dill
In a small sauce pan combine sugar, vinegar, and a few TBSPS of water. Bring to a boil and pour over the cucmber and onion mixture. Stir in dill, cover, and refrigerate for an hour.
