Baked Radicchio and Herbed Goat Cheese
- 2 heads radicchio, cut into 1/4" strips
- 1/4 lb goat cheese; cut into 1/2" pieces
- 1/4 c olive oil 1 garlic clove, flattened
- 1 tsp dried basil 1 tsp dried marjoram
- 1/2 tsp dried rosemary
- Pepper to taste
Preheat oven to 400°F. Place radicchio in a shallow baking dish and arrange goat cheese over the top. Heat oil in a skillet over medium heat and saute garlic until golden brown. Discard garlic. Add basil, rosemary and marjoram to oil and season with pepper. Drizzle over cheese and radicchio and bake until cheese begins to melt, approximately 15 minutes. Serve with bread slices.
